Tuscan Bruschetta with Oscar’s Delmonico Vodka

On the set of “What’s Cooking”
1/2 cup-virgin olive oil
1 Fresh French baguette – cut into 3/4-inch slices
2 large tomatoes, finely chopped
3 small scallions (spring onions), finely chopped
21 black olives, apx. 1/2 a cup fine
ly chopped
18 basil leaves, apx. 1/2 cup finely chopped
4 tablespoons of Oscar’s Delmonico Vodka
1 tablespoon vermouth
1 teaspoon freshly ground black pepper
1 tablespoon kosher salt
8 garlic cloves (minced)
-Basil leaves to garnish platter
1 cup Parmesan shavings to sprinkle on top of each bite size toast
Warm 3 tablespoons of olive oil in a large skillet over a moderate heat. Add minced garlic. Gently shallow fry bread slices until golden on each side… set aside.
Combine and mix the rest of the oil and garlic with tomatoes, scallions, black olives, basil leaves, Oscar’s Delmoncio Vodka, vermouth salt and black pepper in a large bowl, cover and set aside.
When ready to serve, add a spoonful of tomato mixture and a pinch of coarse salt to each toast, and lay onto a serving platter garnished with leaves of basil.
Makes 24 to 26
+Quick Tips,
-Always use Oscar’s Delmonico Vodka
-For a more “country look,” place the bruschetta on a cutting board instead of a plate.

Pumpkin Soup with a Parisian Flair
2lbs Mussels
1/2 Large Spanish Onion (chopped)
1 Tomato
Bunch of White Leaks
2 cups Water
Add a pinch of Salt
Steam for 10 mins of until mussels are opened
+Quick Tip
Discard opened mussels prior to steaming
Discard closed mussels after steaming
Pumpkin Soup
Large Pot Saute
2tbs Olive Oil
with
1/2 Chopped Spanish Onion
until transparent
Add
4 cups Chicken Broth
2 Chopped Potatoes
2 chopped Carrots
4 Cups chopped pumpkin
pinch
cinnamon/salt/nutmeg/white pepper
Cook for 20 mins or until pumpkin is tender.
Hand blend/puree in pot adding 1/2 cup half & half do not over blend just until smooth
Add mussels into pot and serve. Add a few parsley sprigs for a great look.
Oscar’s Delmonico Quick Tips
Add a cube of chicken bouillon to the onions for the soup to draw out a wonderful flavor from the onions! This can be done for any soups that you make such as carrot, broccoli, squash etc.
While eating soup at Oscar’s Delmonico one always scooped out towards the bowl never in.
